For those of you on pinterest, I’m certain you’ve seen this recipe floating around everyone’s recipe boards. It’s from Healthy Happy Life and she just made it sound like this veggie burger was the veggie burger to beat. Well, she wasn’t far off. This burger was delicious!! I really think the bread and toppings are what kick it into overdrive. I followed her advice and used avocado, onion, and dijon mustard. The patty does fall apart as you eat it, but it’s fun! I mean…you ARE eating with your hands anyway.
*I served a light salad on the side, but if I had time I would have made some zucchini chips to go with it!
- 2 cans cannellini white beans, drained and rinsed
- 2 small sweet potatoes, baked/peeled/mashed (about 2 cups)
- 2 Tbsp tahini
- 2 tsp agave syrup
- 1 tsp salted lemon pepper seasoning
- 1/3 cup flour
- additional seasoning (whatever you have on hand – I used a few dashes cayenne & black pepper)
- Panko crumbs
- oil for pan (I used olive)
- Toppings: avocado, Dijon mustard, delicious buns, romaine, red onion, pepper
Preheat oven to 375. Wash sweet potatoes, wrap in foil and bake for 45 minutes. Peel, place in large mixing bowl. Add beans to mixing bowl. Mash beans and potato together. Mash in seasoning, flour and any additional seasoning. Your mixture will be quite soft and moist, but you should be able to form a patty. Add more flour to thicken the mixture if needed.
Heat 1 tbsp oil in a pan over high heat. Form a patty from mixture and coat in Panko crumbs. Thick coating. Then drop the patty in the pan. Repeat until the pan is filled. Cook until browned on both sides.
Transfer cooked patties to paper towel. Cool for a few minutes. Serve on toasted bun with lots of toppings.
