Healthy Roasted Chickpeas

If you are looking for a healthy snack, look no further. Chickpeas or Garbanzo beans are known to be full of fiber and are a good source of protein. Personally, I love them, but I only know of so many ways to eat them or incorporate them into my diet. Add them to a salad or perhaps a soup…you get the point. This snack is a new favorite of mine. You basically roast the chickpeas so they are crunchy and then flavor them with whatever spices you prefer. Below are the ones I used, but you can easily swap out if you want more heat or something sweet, etc. The possibilities are endless, plus it’s cost effective. A can of chickpeas is typically around $1.00 and you can use spices already in the pantry.

  • 15 oz can chickpeas
  • olive oil spray
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp coriander
  • 1 tsp curry powder
  • 1 tsp garlic powder

Preheat oven to 375°. Drain chickpeas in a colander and pat with a paper towel so they are completely dry.

Arrange chickpeas in a single layer on a baking sheet and roast for about 35 minutes. They should be golden brown and crunch in the middle, not moist.

In a small bowl, combine all the spices. Remove chickpeas from oven when done and spray with olive oil. Immediately toss with spices while still hot. Eat immediately!
