So this may, in fact, be one of the greatest inventions ever. One of the most difficult parts of the paleo diet for me is rice. I guess for some it may be bread or pasta, but rice is such a staple in Latin food, that I miss it. Well, I found this recipe for cauliflower “rice” and I think I found a pretty fabulous alternative. It tastes nothing like rice, but is very similar in consistency, texture, and the way it looks. I think I would stick to making it with things that are saucy as it provides the cauliflower with more flavor and it has something to soak up.
- 1 head cauliflower
- 1 tbsp butter or coconut oil
- 1 shallot, finely chopped (optional)
- salt and pepper to taste
Coarsely chop and wash cauliflower florets. Pulse cauliflower in a food processor until it resembles rice grains. Heat the butter or oil in a wide skillet and and saute onions if using.
Add the cauliflower “rice” and saute until softened – do not overcook. Season with salt and pepper to taste and serve.
