Slow Cooked Pernil

Yes! I love love love Latin food, as I’ve mentioned before. Pernil is something I tend to stay away from. It takes a long time in the oven, doesn’t always cook evenly and I feel like I have to constantly watch it. Well, the slow cooker completely saves this recipe. It makes it simple and delicious. I served this with sweet plantains.

  • 4 lb pork butt (or shoulder)
  • 1/2 tsp garlic powder
  • 2 cloves garlic, pressed
  • 1 shallot, sliced
  • 1 tsp oregano
  • 1 1/2 tbsp olive oil
  • 1 1/2 tbsp white vinegar
  • 4 tsp salt

Combine garlic, pepper, oregano, olive oil, vinegar and salt. Rub pork with garlic mixture and refrigerate overnight.

When ready drop into the Crock Pot on low for 8 hrs. Shred with a fork and consume!
