Orange Chicken & Cauliflower Carrot Herb Mash

This may be the absolute best paleo side dish ever. I love cauliflower mash – it tricks me into believing I’m eating something creamy and smooth and bad for me. I wanted to spice it up though as it can seem somewhat bland. So I added in some carrots, herbs, and a few other things and whoa, it is so good! The flavors were yummy and it added a nice texture and bite. I can’t wait to try different versions. I also made orange chicken – very simple and very tasty.

Orange Chicken

  • 1 lb boneless, skinless chicken breast (cut into bite size pieces)
  • 3 tbsp coconut oil
  • 2 oranges, juiced and zested
  • 1 tsp fresh ginger, grated
  • 3 tbsp tamari (wheat-free soy sauce)
  • 3 green onions, chopped

In a small sauce pot, combine orange juice, zest, ginger, and tamari. Set over medium heat and let simmer to reduce and thicken while the chicken cooks.

In a saute pan, heat coconut oil over medium high heat. Add the chicken and cook until browned. Add the sauce to the chicken and stir to coat. Serve with the green onions.

Cauliflower Carrot Herb Mash

  • 1 large head cauliflower, washed and cut into florets
  • 3-4 carrots, peeled and chopped
  • 1 onion, chopped (I chopped in the food processor)
  • 2 cloves garlic, minced
  • 1/2 tbsp dried rosemary
  • 1/2 tbsp dried thyme
  • 1 tbsp olive oil
  • 2 tbsp butter
  • salt and pepper to taste

Place cauliflower and carrots in a steamer basket over a large soup pot. Season with salt and pepper and steam until soft (about 12 minutes).

Heat 1 tbsp olive oil in non-stick skillet on medium heat. Saute onion, garlic, and herbs until the onion is translucent. Season with salt and pepper to taste. Set aside.

Place the steamed cauliflower, carrots, onions, garlic, herbs, and 2 tbsp butter into the food processor. Process until smooth. Season with more salt and pepper if needed. Serve.
