Cilantro Lime Grilled Chicken with Peach Mango Salsa

Hey everyone. I look forward to the occasional guest contribution. Nothing says summer like grilling fresh food. I’d been wanting to create some refreshing grilled meal that was also paleo. I searched and searched for recipes but everyone I found was to spicy, too sweet, or really complicated.

I stumbled upon this recipe and couldn’t be happier. Below is a recipe for Cilantro-Lime Grilled Chicken with peach mango salsa and cauliflower “rice”

Cilantro Lime Grilled Chicken

  • 2 pounds chicken breast
  • 1/4 cup of tamarin (or soy sauce)
  • 2 limes
  • zest of 1 lime
  • 4-5 cloves of garlic1 tsp of crushed red pepper
  • 1 tsp ground cumin
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1 c. of chopped cilantro
  • 2 tbsp of honey
  • 1 chopped jalapeno or Habanero (deseeded)
  • 3 tbsp canola oil

Peach Mango Salsa

  • 2 large mango
  • 2 ripe peaches (soft to touch)
  • 1/2 cup chopped cilantro
  • 1 lime
  • 2-3 stalks of green onion
  • 1/2 tsp pepper
  • 1 chopped jalapeno (deseeded)

Mix all ingredients together for cilantro lime chicken, ensure the honey is well mixed. Pierce chicken and pour over chicken and seal in plastic bag for at least 45 mins. Longer is better but I wouldn’t recommend more than 8hrs as the chicken will get really tangy.

Heat a grill of your choice to a high heat (I use gas, because I suck at maintaining charcoal). Turn the direct flame down to low and grill each side for about 7-8 minutes Limit the number of times you flip the chicken so you can achieve the pretty grill marks. Remove from grill once chicken is done, let rest for 1-2 minutes before cutting/serving.

In a bowl add diced/chopped mangoes, peaches, green onion, jalapeno, and cilantro. Add juice of lime, salt, pepper, stir. Enjoy.

I hope you enjoy this as much as my friends and family did. The chicken is even better the second day.
